Savory Garlic Mashed Potatoes

Savory Garlic Mashed Potatoes are another fam and fan favorite that was passed down from my mother. We called them Twice Baked Potatoes growing up but I think Savory Garlic Mashed Potatoes is the better name! And it’s a fool proof recipe for the faint of heart cook!

Ingredients

8 medium sized potatoes
8 oz. cream cheese softened
1/2 cup melted butter
1/4 cup chives
1 clove garlic (or 1 tbsp. garlic powder)
2 tsp. salt

Directions

Boil potatoes until you can put a fork thru them. Do not over boil!
Then mash them by mixing with a mixer.
Mix in all other ingredients once the potatoes are initially mixed.
Refrigerate overnight. Can be made the day of but is best if made the day before.
Bake at 375 degrees for 30 minutes the next day if mixing them a day prior.
You can place a pat of butter on top of the hot potatoes before serving. Gives it a nice appearance.

Like I said, it’s best if prepared the day before serving. I’m a huge fan of preparing all the food the day before and only heating/baking on the day of! All the mess is out of the way when you do this. Do you cook the day before or fix everything the day of?
